There's something special about a thick grilled burger in the summertime. But even the best memories of the puck of grey meat product moonlighting as a thick burger leave something to be desired. We've all been there. Still nostalgic and sometimes good with enough toppings, but we can do better. In this video I'm grinding the meat, making the sesame seed buns, and getting serious about toppings for my ultimate thick grilled cheeseburger. ☕Enjoy this content and want to show support? Spread evenly on tray and freeze for 25min. I use a food processor here, but you can use a meat grinder if you have one. Load meat chunks into food processor (about 1lb/.5kg at a time depending on size of your food processor) and process for 20-30sec on high or until meat and fat look well chopped together. Meat should still be crumbly. Mix batches of meat together. Measure out 6, 8oz/225g patties. You can flatten into rounds and shape by hand or find a disc/lid that you can use as a mold. Work the meat patties with your hands a bit until they holds together well. Create an indentation in the middle of each patty then refrigerate until you're ready to grill. When it's grillin time, season patties with salt, pepper, and steak seasoning (if you'd like). Grill over med-high heat for about 90sec on side one. Flip, and grill for 90 sec on side two. Flip a last time and cook for about 60sec or until interior temp reaches 125F/50C. Top with cheddar slices and allow meat to rest off the grill while you toast your buns. BUN: • 125g or 1/2c warm water (86F/30C) • 3g or 1tsp instant yeast • 35g or 2 3/4tbsp sugar • 75g or about 1/2c mashed potatoes • 45g or 3tbsp melted butter • 300g or 2c AP flour (11.7% protein) • 5g or 3/4 tsp salt • Sesame seeds (untoasted) Measure water, yeast, sugar, potatoes, butter, flour, and salt into bowl of stand mixer fitted with dough hook. Mix on low for 3min until combined. Increase to high speed for 5 min until gluten is developed and dough can be gently pulled without ripping. Cover and let ferment at room temperature for 90min. Flip onto floured work surface and divide into 6 100g pieces of dough. Shape dough balls as shown 🤍1:51. Grabbing dough balls by the bottom seam, roll top of dough ball onto a damp towel then into sesame seeds then place on a sheet tray prepared with an oiled piece of parchment, seam side down. cover dough balls and allow to proof at room temp for 45min. Preheat oven to 400F/204C. Brush dough balls with egg wash. Load into preheated oven and bake for 15min. Slice and toast/grill to get a little color on the bun before burging. Go to Squarespace.com for a free trial, and when you’re ready to launch, go to 🤍 and add code “RAGUSEA" at checkout to save 10% off your first purchase of a website or domain. *RECIPE, MAKES TWO BURGERS* 12-16 oz (340-450g) loosely packed, freshly ground chuck (or other ground beef at least 20% fat) 2-4 slices of cheese (American cheese melts great, but I like smoked gouda on indoor burgers) 2 buns (I look for particularly soft buns — they toast up better) toppings (I like lettuce, sweet onions, dill pickle chips, mustard and ketchup) oil (I only use this for the pan, not the grill) salt pepper garlic powder Get your grill or pan heating to moderate heat. Divide the beef in two and form each half into a patty that's a little wider than you want it in the end. Be very careful to not overwork the beef — try to keep the internal structure of the patty as loose as possible. Press a valley into the center of the patty so that the outer rim is thicker — I think of it as an inverted lens shape. If you're cook these in a pan, lightly coat them in oil. If you're cooking them on the grill, I'd skip the oil. Season the outsides heavily with salt, pepper and garlic powder right before you cook. Gently lay the patties on the grill or in the pan, and don't move them until the bottom has browned thoroughly — 5-7 minutes. Use a metal spatula to scrape the burger from the surface and flip it. If you want a pink burger, wait until you see just a little juice pushing up from the surface. If you want your burger cook through, wait until a lot of juice starts to cover the surface. Put down your cheese, cover the burgers with a lid or foil or some such and cook until the cheese is melted. Remove the burgers to a plate and let rest a couple minutes while you toast the cut sides of the buns on the grill or fry them in the pan until lightly golden. I like to put once big slice of lettuce on the bottom bun to serve as a moisture barrier, then some slices of sweet onion, pickles, ketchup and mustard. If you put the toppings under the patty, they hit your tongue before the meat does, which I like.

Grilled Hamburger Recipe | How to grill a burger on the Big Green Egg For more barbecue and grilling recipes visit: 🤍 For these grilled hamburgers I start with 1lb of ground sirloin and 1lb of 80/20 ground chuck. The sirloin is lean and gives the grilled burger a steak-like taste but you need the fat from the ground chuck to keep the grilled burgers moist. Mix the sirloin and chuck together and form into ½ lb hamburger patties. Use your hands and don’t work the meat too much. Season each side with Salt, Black Pepper, & Granulated Garlic (my AP seasoning can be found here: 🤍 then top with a little coarse ground steak seasoning . (I used my Steak & Chop and it can be found here: 🤍 Fire up the grill to medium high heat about 400⁰F and place the hamburgers directly on the grate. Grill the burgers for 6-7 minutes on each side then flip. Continue cooking for another 6-7 minutes and resist the urge to mash or flatten the burgers on the grill. (this only pushes out moisture and flavor). I like my burgers grilled medium on the inside which is 140-145 internal. There’s not much pink at this stage but the grilled burgers are nice and juicy. You can dress these grilled hamburgers however you choose but since it’s Super Bowl Sunday I came up with a little something special for each team. First up is my Denver Broncos Burger: 2 - 8oz Hamburger Patties 2 - 1/4” slices Sugar Cured Ham 4 - Strips Bacon 2 – Slices Cheddar Cheese ½ Green Bell Pepper Diced ½ Sweet Onion Diced 2 – Eggs 2 – Hamburger Buns Green chili Mayo for dressing *recipe to follow Cook the bacon according to directions until crispy. Sauté’ the green pepper and onion in a small skillet using a couple teaspoons of bacon drippings. Grill the burgers as directed above and top with slice of cheddar cheese as soon as they’re done. While the burgers are grilling fry the eggs in a little bacon grease over easy. Toast the buns cut side down on the grill 30 sec each. To assemble the burger: Spread Green Chili mayo on bottom bun, place burger patty on top. Lay 2 strips of bacon over burger and top with a heaping Tablespoon of green peppers and onions, then the fried egg. Spread a little green chili mayo on the top bun and enjoy. Green Chili Mayo (more than enough for 2 burgers) - 1 cup mayo - 1 Tsp minced garlic - 3 Tbsp diced green chili - 1 Tbsp lime juice - 1 Tbsp hot sauce - 1 Tsp AP Rub Mix and allow to sit in fridge for at least 3 hours For the Carolina Panther Burger: 2 – 8oz Hamburger Patties 1/2 lb – Carolina Style Pulled Pork (recipe can be found here: 🤍 4 – Strips Bacon (cooked crispy) 1 bag of Shredded Red Cabbage 2 – Hamburger Buns Hot Sauce Mayo * Vinegar Sauce * Grill the burgers as per the directions above. Toast the buns on the grill 30 sec each. To Assemble the burger: Spread Hot Sauce mayo on the bottom of each bun. Place a burger patty on each and top with 2 bacon strips. Grab a handful of the pulled pork and mound on top. Drizzle the vinegar sauce over the pork and top with a little shredded cabbage. Dress with a little more vinegar sauce and the top bun. You can add extra hot sauce mayo is you like it spicy! Hot Sauce Mayo (more than enough for 2 burgers) - 1 cup mayo - 4 Tbsp hot sauce - 1 Tsp lemon juice mix and allow to sit in fridge for at least 3 hours Carolina Vinegar Sauce - 1 cup Cider Vinegar - 1 teaspoon Kosher Salt - 1 pinch Red Pepper Flakes Combine in a small sauce pan and heat until simmering. Pour into a jar and cool. Both these “Super Burgers” are guaranteed to score at your Super Bowl party. Give them a try and let your guests decide which is better! There’s nothing fancy here - I use 80/20 ground chuck, a good fire, some seasoning, and my favorite burger toppings to create this master piece. I’m not sure what grill I used to cook my first burger but if I was a betting man, I’d say that it was a Weber grill. I would guess the classic 22” Weber kettle has cooked more burgers than any other grill in America, but you don’t have to own a Weber to cook a good burger. Any grill will do the job but I do recommend setting it up for a 2 zone fire. That way you have a hot zone and a cool zone just incase those burgers start flaring up. Once you have the grill ready the burger cooking part is easy. Divide 1lb of ground chuck into four portions and patty it out. I do like to season the meat before forming the patty to add flavor to the inside of the meat with KillerHogs AP Seasoning 🤍 ; and I also season the outside with a corse seasoning like my Killer Hogs Steak Rub 🤍 . You can use any burger seasoning or simply go with salt and pepper. To grill the burgers place each patty on the cool side of the grill first - here’s a little tip - use your thumb to make an indention in the center of each burger and place a pat of burger in the thumb print (it’ll make them juicy). Set a timer for 6 minutes on the first side (after 3 minutes I move them closer to the direct heat side). Flip the burgers over and repeat -starting them a little away from the coals and then moving them closer so you get some flame action. After 12 total minutes the burgers should be about medium internally (you can cook them as long or as little as you desire). Right before taking them off the grill - like 30 seconds - add a slice of American Cheese to each burger. To build my classic American Burger I start with a toasted sesame seed bun. Slather it with mayo then a squeeze or two of mustard; layer on green leaf lettuce, sliced ripe tomato, and dill pickles; add the burger and top it with 2 strips of crispy bacon followed by the top bun slathered with more mayo of course. There you have it - my all time favorite - All American Grilled Cheeseburger Recipe All American Grilled Cheeseburger Recipe Ingredients: - 1lb 80/20 ground chuck - 1 teaspoon Killer Hogs AP Seasoning - 1 Tablespoon Killer Hogs Steak Rub - 4 pats of salted butter - 8 strips of bacon cooked - 4 sesame seed hamburger buns - toasted - Lettuce, sliced tomatoes, Pickles, Mayo, and Mustard Directions: 1. Prepare Weber kettle style grill for 2 zone cooking - hot coals on one side and cool zone on the opposite side. 2. Season the ground chuck with AP Seasoning and divide into 4 portions forming each into a ball. Place each ball of ground chuck on a burger press (or form into a patty by hand) 3. Season each burger patty with steak seasoning on both sides. Make an indention in the center of each patty and place a pat of butter in the depressions. 4. Place the burgers on the grill grate on the cool side at first. After 3 minutes move them a little closer to the fire but not directly over. Flip each patty after 6 minutes and repeat the process until the reach your desired doneness (mine is medium which is about 12 total min cook time) 5. Place a slice of cheese over each burger right at the end and let it melt for 30 seconds before removing the burgers from the grill. 6. To build the burgers start with a toasted sesame see bun slathered with mayo and a little mustard on the bottom bun. Add your favorite burger toppings mine are: lettuce, sliced tomato, and hamburger style dill pickle slices. Place the burger patty on top and finally the top half of the bun slathered with a little extra mayo. My previous recipe for thicc burgers: 🤍 *RECIPE* ground beef that's at least 20% fat (1/4 lb, 113g per patty, I do two patties per person) cheese slices (American cheese is probably best for thin burgers) salt pepper garlic powder clarified butter buns toppings (I do lettuce, raw sweet onions, pickles, ketchup, mustard) If you don't have clarified butter, you can make it by boiling butter over low heat until it's boiled out most of its water and the milk solids are just starting to turn golden, 10-15 minutes. Strain through a paper towel. If you're using freshly ground beef that has a loose internal texture (kinda like worms), it helps to knead the meat for a few minutes until it develops a tighter, pasty texture. This will help a very thin burger hold together as you cook it. I like to cut a parchment paper square for every thin burger I'm going to cook. I divide the meat into individual balls, dip them in clarified butter, then press them into the paper, making them a little thicker along the rim than they are at the center, and making them considerably wider than I want them in the end. I like to season the tops with pepper and garlic powder, but no salt yet. With the paper, you can stack them up and put them in the refrigerator until you're ready to cook — they'll be easier to handle cold. If you're cooking these outside, a charcoal grill is usually the best way to get the extremely high heat necessary for thin burgers. Make your fire about as hot as you can. If you're doing these inside, a wide cast iron pan over high heat is a good option, but be aware this is going to make a lot of smoke. When your cooking surface is extremely hot, peel the burger halfway off the paper before carefully plopping it onto the heat. When the burgers are on, that's a convenient time to sprinkle on some salt — with a thin burger, I don't think it really matters if you season both sides lightly or season one side heavily. When juice is starting to pool on top of the burgers, they're probably ready to flip. Scrape the burger from the bottom before flipping. If you want cheese, put it on immediately after flipping — American cheese is more likely to actually melt in time. When the bottom is brown, a very thin burger is almost certainly done on the inside, or will be done after it rests for a few minutes. Toast the cut sides of the bun in the heat, but keep in mind they'll probably only need 10-15 seconds at these temperatures. Assemble and top your burgers as you desire.
